Ingredients:
- 1 medium butternut, peeled and cubed
- 1 onion, roughly chopped
- 2 cloves garlic, peeled
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- 4 cups low-sodium vegetable stock
- ½ cup plain Greek yoghurt or light cream
- Pumpkin seeds and fresh herbs for garnish (optional)
Method:
Step 1: Roast the vegetables
Preheat your oven to 200°C.
Place the butternut, onion and garlic on a baking tray. Drizzle with olive oil and sprinkle with cumin, smoked paprika, salt and pepper. Toss to coat evenly.
Roast for 30–35 minutes, or until the butternut is soft and lightly caramelised.
Step 2: Blend the soup
Transfer the roasted vegetables to a large pot and add the vegetable stock.
Using a stick blender, blend until smooth and creamy. Alternatively, carefully blend in batches using a blender.
Step 3: Add creaminess
Stir through the Greek yoghurt or light cream and gently heat the soup for a few minutes without boiling.
Taste and adjust seasoning if needed.
Step 4: Serve
Ladle into bowls and garnish with a swirl of yoghurt, a sprinkle of pumpkin seeds and fresh herbs such as parsley or thyme.
