  • ½ avocado, sliced

  • ½ cucumber, thinly sliced

  • 1 carrot, grated

  • ½ cup edamame beans

  • 1 small mango, diced (optional for sweetness)

  • Red cabbage, shredded

  • Spring onions, sliced

Sauce

  • 2 tablespoons low-sodium soy sauce

  • 1 teaspoon sesame oil

  • Juice of ½ lime

  • 1 teaspoon honey or maple syrup

  • Fresh grated ginger (optional)

Garnish

  • Sesame seeds

  • Fresh coriander

  • Chilli flakes (optional)


How to Build Your Bowl

  1. Cook the rice according to package instructions and allow it to cool slightly.

  2. In a small bowl, combine soy sauce, sesame oil, lime juice, honey, and ginger.

  3. Gently toss the diced salmon in half the sauce mixture.

  4. Divide the rice into serving bowls.

  5. Arrange the salmon and toppings neatly over the rice.

  6. Drizzle with remaining sauce and sprinkle with sesame seeds and herbs.
