Mediterranean Stuffed Peppers with Chickpeas, Quinoa & Feta

Bright, wholesome and bursting with flavour, these Mediterranean Stuffed Peppers are a simple way to enjoy a balanced, nutrient-rich meal. Filled with protein-packed chickpeas, fluffy quinoa, juicy tomatoes, fragrant herbs and creamy feta, they’re perfect for a healthy weeknight dinner or meal prep lunch.

Following a Mediterranean-style way of eating has been linked to better heart health and overall wellbeing. This recipe brings together fresh vegetables, whole grains and legumes to create a satisfying meal that’s naturally high in fibre and packed with essential nutrients.

Mediterranean Stuffed Peppers

Cook Time: 35 minutes

Ingredients

  • 4 large bell peppers (red, yellow or orange)
  • 1 cup cooked quinoa
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • ½ cup crumbled feta cheese
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste

Optional Garnish

  • Extra feta
  • Fresh basil leaves
  • A squeeze of lemon juice

Method

  1. Preheat your oven to 190°C.
  2. Slice the tops off the peppers and remove the seeds and membranes.
  3. Place the peppers in a lightly greased baking dish.
  4. In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, garlic, olive oil, oregano, smoked paprika, basil and parsley. Season with salt and pepper.
  5. Fold in half of the feta cheese.
  6. Spoon the filling evenly into each pepper, packing it gently.
  7. Bake for 30–35 minutes, or until the peppers are tender but still hold their shape.
  8. Remove from the oven and sprinkle with the remaining feta.
  9. Finish with fresh basil and a squeeze of lemon juice before serving.
